Deleting brush strokes

To delete a brush stroke from the Stroke/Brush List panel, select it from the Stroke gallery (as though you were applying it to a path), and then click Delete Stroke from the drop-down list at the bottom of the gallery.

Deleting a stroke does not affect any objects on your page that still use that stroke.
